Running a restaurant is demanding enough, but Zach also maintains a full-time job outside of Fierro’s, in addition to managing all the pizza trailer events. He’s present in the shop daily, helps with operations, and is personally on-site for every major event the catering side handles. “It’s a lot,” he admits. “But I love what I do, and when you love it, it doesn’t feel like work.”

That work ethic shows. Fierro’s has grown to include not one but two mobile pizza trailers to meet demand. “We were saying no to too many people,” Zach says. “The second trailer allows us to be in two places at once.” With an excellent staff and growing reputation, the Fierro’s team is now equipped to handle everything from weekday corporate lunches to multi-site weekend bookings.

Despite all the growth, Fierro’s remains deeply tied to the Greenfield Center community.
