WILTON, NY — April 22, 2026 — Canopy of Saratoga, 697 Saratoga Road (Route 9), Wilton, NY. Canopy of Saratoga will celebrate its official Grand Opening on Earth Day, Wednesday, April 22, with a ribbon-cutting ceremony in partnership with the Saratoga Chamber of Commerce, marking its first spring growing season as a garden center following a soft opening in November.

The public is invited to attend the ceremony and take part in a large-scale community “family photo” captured by drone—courtesy of Roohan Realty—immediately following the ribbon cutting. Attendees, including local residents, partners, and vendors, are encouraged to participate in what organizers describe as a lasting record of a space designed to bring people together.

“We built Canopy to be a place where people come together—whether that’s over coffee, in the garden, or simply spending time with one another,” said Todd Smith, co-founder. “This grand opening is really about the community that’s already formed around it, and the one that will continue to grow here.”

The event begins at 9:30 AM with complimentary coffee and pastries, followed by the 10:00 AM ribbon cutting and community photo.

A New Chapter for a Family-Owned Business

While Canopy of Saratoga has been open to the public since November 18, the Grand Opening marks the completion of key elements of the property—including the greenhouse and outdoor plant yard—and the beginning of its first full spring season as a garden center.

Operated by the family behind Mandy’s Spring Nursery, with regional roots dating back to the 1930s, Canopy was created by Todd and Leonie Smith alongside their children Dustin, Ford, and Molly. The space brings together plants, design, food, and community under one roof.

Family remains at the center of the experience. Grandpa Peter supports the property through a steady stream of hands-on projects, while Grandma Charlotte bakes her highly sought-after carrot cake each week—now joined by her key lime pie in the café’s deli case.

The greenhouse café offers breakfast and lunch fare, espresso drinks, and a rotating menu of seasonal offerings prepared by a team of veteran baristas known for designing creative, ever-changing espresso specials.

Every detail of the property reflects a commitment to craftsmanship. Custom ironwork lamp posts featuring Adirondack flora and fauna are integrated throughout the site, while the glass greenhouse creates a light-filled environment that shifts with the seasons. The outdoor plant yard—now fully open—features a mix of specialty and familiar plants, along with a water feature and fire pit designed to encourage gathering.
